Toronto hotel unveils ‘Champagne Wall’

Shangri-La Hotel, Toronto has debuted its new Champagne Wall — or “C” Wall — in its Lobby Lounge adjacent to its signature restaurant, Bosk.

The wall features champagne and sparkling wines curated by the hotel’s sommelier, Mark Moffatt. The “C” Wall will stock champagne labels from prominent champagne houses including Perrier Jouet and Billecart Salmon as well as rare champagnes such as the 1998 Henriot Cuvée des Enchanteleurs. The champagne offering will also feature a by the glass selection, which includes the hotel’s house champagne Perrier Jouet along with other varieties such as Dom Pérignon Roséand Jacquesson Cuvée 736 from the Champagne region.

In tandem with the launch of the “C” Wall, Executive Chef Damon Campbell has premiered a Lobby Lounge menu created to complement champagne, including northern divine caviar, pâté de campagne and artisanal cheeses.

Richard Cooke, general manager of Shangri-La Hotel, Toronto, described the design of the Champagne Wall as “inspired by a movie I watched a few years ago. If I were to picture Shanghai meeting Toronto, two cities I have had the privilege of serving in, I pay reverence to the creativity and beauty that is alive and well in today’s Shanghai, but I then romanticize it by imagining it in the halcyon days of the 1930’s. The result, my Champagne Wall.”
