Bellagio squeezes returns out of juice bar

For a guaranteed return on investment introduce a food or drink product that is already well-known. Add in a nutritious element and today’s wellness followers also become excited.

In April, Bellagio Las Vegas added to its range of to-go options a juice bar. “Whatever the offering, we always want to work with the best – a year ago, we opened an SJP shoe store, with Sarah Jessica Parker personally cutting the ribbon,” says Randy Morton, president and chief operating officer of the 3,950-room Bellagio Resort.

At Bellagio Las Vegas, the 10-foot wide, open-fronted store is open 6 a.m. to 11 p.m. Situated on the busy walkway between the resort’s man lobby and its convention center and 928-key Spa Tower block, there is heavy footfall at all hours. In addition to selling hundreds of bottled beverages, one of the Bellagio’s servers who makes blended drinks to order reckons she and her colleagues whiz up over 200 bespoke drinks a day.

The best-seller is Nurse Green Ginger, a US$12 smoothie that is spinach, kale, ginger, apple, banana, plant protein, lemon date, maple and water, in all a total of 110 calories. Drinks can be supplemented with such foods as all-day avocado toast and raw oatmeal.

Interestingly, the juice outlet does not seem to take any business away from the Bellagio Patisserie, immediately opposite – some supplement a calorie-high Patisserie croissant with a Rehab Shot (ginger, lemon, cayenne, 45 calories).

“Yes, we are very happy” with the juice outlet, says Morton, adding that the kiosk offers a 20% discount for Bellagio’s 8,200 colleagues.
