Palmer House Looks To Liven Up Lobby

Scheduled to open next month at the Palmer House Hilton in Chicago is the new Lockwood Restaurant. Named for the beloved brother of Potter Palmer’s wife, Bertha Honore, Lockwood will serve three meals a day, from business breakfasts and lunches to a refined dinner experience for hotel guests and locals alike.
The contemporary cuisine from Executive Chef Phillip Foss will be rooted in French and Italian traditions. “The menu is diverse to offer something for almost every palate,” Foss says.
For lunch, options will include steamed Blue Hill Bay mussels in an herbaceous chardonnay broth, buffalo silver dollar sliders with a black peppercorn sauce on mini pretzel buns and a different take on the traditional Cobb salad. At dinner, look for osso bucco prepared in a ravioli with Jerusalem artichoke puree and a Parmesan-Reggiano foam; pan roasted Georges Bank codfish served with wild mushroom risotto; and surf, turf and turf, which combines prime beef tenderloin, short ribs braised in a red wine sauce, and butter poached Maine lobster with a perigord sauce and béarnaise.

The restaurant is located off the hotel lobby, so the island bar shares part of the lobby space as well as part of the restaurant space. The main dining room, seating 156, is anchored on one end by a wine library and on the other by a breakfast buffet service room, which can be closed of to view during lunch and dinner periods.
Interior design includes mohair and leather paired with rich woods, alongside contemporary chairs and table settings. Details include large-scale acanthus leaf wall coverings and original Tiffany candelabras.
