Honey Harvested From Chicago Marriott Roof Used For Craft Beer

Chicago Marriott Downtown Magnificent Mile has taken an unusual approach when it comes to utilizing one of the higher points of their property, filling its roof with none other than… bees. Over 200,000 Italian five-striped honey bees call the Marriott’s 9th floor rooftop home as they work to produce honey that guests can savor in the hotel bar and Harvest Restaurant.

The hotel's own Rooftop Honey Wheat beer is a collaborative effort between the hotel and Chicago’s own Half Acre Brewery. Since implementing the concept earlier this summer, the bees have already produced over 200 pounds of honey! By utilizing the honey produced on the hotel’s rooftop, Half Acre Brewery is able to create a brew that’s not only fantastic, but completely unique to the area. Guest’s can enjoy a drink knowing that they’re not only supporting a local brewery, but the hotel as well.
