The JW Marriott Orlando Grande Lakes hopes to aid aspiring culinarians in their quests to master various techniques, from breadmaking to hors d’oeuvres preparation to sushi rolling. The hotel is offering interactive classes in all three areas, starting at US$90 per person.
Pastry Chef Philippe Sanchez leads the breads and truffles cooking class for groups of 12 to 30, for which instruction includes the production of dough using different types of flours, ingredients and methods, as well as a demonstration of how to make truffles with various fillings, flavorings and designs. The shaping, proofing and baking processes all are explained while attendees work to make their own rolls. All items are baked during the session so that the finished product can be tasted on site.
In the hors d’oeuvres class, students learn to make all types of appetizers: the amuse bouche, the single spoon, the savory scone, etc. In the sushi class, the hotel’s sushi chef demonstrates how to make various rolls including California rolls, spicy tuna rolls, inside-out rolls and the surf-and-turf roll. Ingredients are provided for students to roll their own versions of these items or to create their own rolls after the lesson, and the class includes a sushi and sake tasting.
