Chef Bausa Opens Tequila Library At Rosewood Mayakobá

Spanish Chef Daniel Bausa has put his stamp on three unique restaurants at the newly opened Rosewood Mayakobá in Riviera Maya, Mexico, including a tequila “library” with more than 100 varieties of the spirit. Bausa’s F&B offerings mix European cuisines with Mexican flair, and that most favorite of local specialties, tequila, is prominent on the menus.
Agave Azul Raw Bar & Tequila Library is the resort’s F&B centerpiece. Each evening at Agave Azul, resident tequila experts share their insights and advise guests on imbibing the traditional Mexican alcoholic beverage. Agave Azul also features seafood ceviches and cocktails, as well as a wide selection of appetizers.
The casual beachfront Casa del Lago restaurant, which features views of the main pool and a nearby lagoon, offers a breakfast buffet, a light alfresco lunch and a romantic setting for dinner. Signature dishes include poached eggs with sautéed foie gras and truffle; flatbread of gorgonzola cheese, caramelized pears and balsamic vinegar; and suckling pig with apple ravioli, onion compote and au jus with peanuts.
The resort’s Punta Bonita restaurant specializes in Mexican dishes served in a casual open-air setting, with views of the Caribbean Sea. Cochinita Pibil—Yucatán marinated pork in achiote seed stew—and breaded fish tacos with smoked chipotle chili pepper mayonnaise are house specialties. And guests can top off their meals with adventurous desserts like three-milk Mexican cake with habanero confit.
