Potter's Bar Opens At Palmer House Hilton

As part of the major renovations underway at Chicago’s storied Palmer House Hilton, Potter’s, an elegant bar and lounge opens today. Named for the Palmer House founder, Potter Palmer, Potter’s carries the classic sophistication of the property into the space and cocktail program, bringing well-defined character and friendly service to the Chicago Loop’s emerging nightlife scene.

Potter's InteriorStep into Potter’s and be surrounded by a comfortable, intimate seating area leading to an expansive seductive bar at the far end of the room. The bar area, a few steps above the main space, is flanked on either side by glass enclosed columns of plush white feathers. The dramatic yet inviting space pays homage to the great 20th century iconic figures who influenced Chicago – and who played a role in the Palmer House’s rich history – with oversize black and white images of Hugh Hefner, John Belushi, Walter Payton, Louis Prima, Nat King Cole and others.

The cocktail program also celebrates classic style with retro cocktails done well including Kir Royale, Gin Fizz, Whiskey Sour, and Singapore Sling, a refreshing blend of gin, cherry brandy, lemon juice, powdered sugar and seltzer water.

Chicago Tribune three-starred Lockwood Chef Phillip Foss will prepare upscale bar dishes, ranging from goat cheese in a mini crock served with almond stuffed olives, lemon oil, fresh herbs and crackers (US$12) to steamed Blue Hill Bay mussels marinière style in a white wine broth, with shallots, garlic and herbs (US$14); truffled potato chips (US$6); market greens (US$10) and caesar salad (US$10). Sandwiches include Scottish salmon sandwich on a pretzel bun with braised endive, pears, and whole grain mustard (US$16); short rib sandwich on pretzel bun with red wine sauce, horseradish and watercress; grilled emmenthal cheese on nine grain bread with applewood smoked bacon and grilled tomato (US$12); and angus burger (US$12).

Potter’s will be open from 3 p.m. to 2 a.m. daily.
