A Taste Of Honduras

With this post, I am introducing a new semi-regular feature to the Something To Talk About blog--food from around the world. As I travel, I will be chronicling the food I eat at various hotels across the globe through photos and descriptions.
My first food entry comes from my recent trip to Honduras, and specifically from the Itzama restaurant at The Lodge at Pico Bonito, a 22-cabin eco-lodge and member of the Small Luxury Hotels of the World near La Ceiba.
For dinner, I enjoyed the coconut shrimp with jalapeno marmalade.

Other intriguing menu items include a spicy version of typical Honduran North Coast conch soup (below), jalapeno cheese cutlets (a vegetarian offering), drunken breast of chicken (served in a rum reduction), and chocolate coffee medallions (beef medallions coated in cacao and coffee and seared, served over red wine carmalized onions).

Dear Derek, Allow me to compliment you on the increible articles you have been writting about Honduras. I am a fervent suscriber to Hotels magazine and always thought that they should also feature news regarding up and comming promising "greenfield destinations" such as Honduras. In my many years of expertise in the Central American tourism industry I have never seen a journalist with hotelier background write so well about a destination. Cheers and keep up the good work. Derek, Hello again. Funny story is my aunt used to be the chef at the Lodge at Pico Bonito and that first picture, coconut shrimp w/ Jalapeño marmalade, was one of her original recipes left behind.
