A Modern General Store - Brilliant!

July 10, 2009

The following is an example of a good idea that has been well-executed.

The Hyatt Regency Lake Tahoe Resort, Spa & Casino decided to transform one of its seasonal restaurants into a modern general store–a 1,300-sq. ft. specialty gift shop, grocery and gourmet market for guests and resort visitors seeking quick and affordable bites throughout the day (6 a.m. to 8 p.m.), as well as grab-and-go items.

Tahoe Provisions - a modern general store at the Hyatt Regency Lake Tahoe Resort, Spa & Casino

It’s a place guests can go to stock up on provisions for their rooms or grab supplies for a picnic, with offerings ranging from breakfast breads/pastries and granola to salads, grilled panini sandwiches and fresh-baked cookies or fresh-fruit smoothies. They even offer boxed s’mores kits complete with a long roasting stick to use at the resort’s fire pits.

Sound good? Well it looks even better. Designed by Cass Calder Smith and his team at CCS ArchitectureTahoe Provisions is a streamlined, sophisticated and modern but welcoming space.

Natural materials like black walnut and hickory walls, blackened steel, and black granite countertops contrast rustic with refined. Walnut merchandise carts with unfinished edging add another rustic element, while a display wall of provisions changes seasonally, providing visual interest.

And custom-designed chairs and tables equipped with power access provide seating for up to 18 guests, who can check e-mail while watching televisions built into the wall.

“At the Hyatt Regency Lake Tahoe, in our location on Lake Tahoe’s North Shore in Incline Village, many of our guests are content to spend every moment enjoying the resort. With the addition of Tahoe Provisions, guests will have approachably-priced items conveniently on hand without leaving the property,”  says General Manager Mark Pardue.

Regardless of whether this was a good idea or not, the design is quite well worked out. Kudos for the layout/decor.

Gabor: I think it's less about the general store cannibalizing revenue from other hotel F&B outlets or roomservice and more about adapting to give guests and locals alike what they want today (and even more so given the current economy). I'm not saying Hyatt guests can't afford more than a provisions store, but if they're choosing to eat less (and less formally) and spend less, isn't it better to capture some revenue than nothing at all (by driving them off-property with an outdated fine-dining restaurant concept)?

I am baffeld by this initiative. In my reading this revenue is going to seriously bite into the F&B outlets' revenue and will drive in a fraction of the margin vs. meals sold in restaurants or room service. If a Hyatt guest can't afford more than a Provison Store -- that says a lot about a foundamental shift in market orientation for the brand.

I simply adore this idea! It is like the little store at the camping area, or near the hostel... where the front desk has all the necessities... marshmallows, wood, etc. =) Seriously... it would be wise for hotels to cash in on this. We destroy revenue streams.. look at the telephone. That was our bread and butter and we botched that so badly no one uses them as more than an intercom now. With the economy weak, and people cutting back any way they can... I know a lot more trips where the guests end up going out to grab some snacks and in room grocery options to survive their trip.... Quite a good post... thanks for the thoughts! @hhotelconsult www.hrabaconsulting.com/blog
